Roast Veggie Salad

Cut slices of:

Pumpkin

Kipfler potatoes

Parsnip

Sweet Potato

 

Fry in heavy pan in hot oil and then roast for about 30-40 minutes

 

Combine with Pesto Mayo while veggies are still warm and serve

 

Pesto Mayo

Combine the following:

4 tabs mayo

2 tabs sour cream

2 heaped teas pesto
